Be it a <em>chasuna<\/em>, <em>Bar Mitzvah<\/em>, or <em>bris<\/em>, every significant life cycle event is extra special and the <em>baalei simcha <\/em>want to ensure that their guests have a good time.\u00a0 Central to that goal is a delicious <em>seudas<\/em> <em>mitzvah<\/em>. \u00a0Endless hours of planning are spent making sure everything is perfect, from the decor to the menu. \u00a0Is the same effort expended regarding the <em>kashrus <\/em>level of the event? If the <em>simcha <\/em>is being catered, does the caterer have reliable <em>kosher <\/em>certification?\u00a0 As catering costs have risen, consumers have opted to cater their own <em>simchas<\/em>.\u00a0 This article will attempt to address some key issues that one should consider when catering an event.\u00a0 <!--more--><\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: medium;\"><strong>The <em>Kiddush <\/em><\/strong><\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\">Pre-planning your <em>kiddush <\/em>is the best strategy to guarantee that the <em>simcha <\/em>will encounter a minimum amount of glitches. \u00a0If the <em>kiddush <\/em>is being held in a <em>shul<\/em>, inquire about their guidelines. Some <em>shuls <\/em>have their own <em>kiddush <\/em>committee; others will allow you to prepare the <em>kiddush <\/em>yourself. \u00a0Even if you cater it yourself, there aremany details that need review. \u00a0For instance, which certifications does the <em>shul <\/em>permit? \u00a0Does the <em>shul <\/em>require that all baked goods be <em>pas Yisroel <\/em>and\/or <em>yoshon<\/em>? \u00a0Can you purchase boxed bakery goods from the supermarket, or must the baked goods come from a <em>Shomer Shabbos <\/em>bakery?\u00a0 Furthermore, cakes are often decorated with pictures or lettering that one may not cut on <em>Shabbos<\/em>. \u00a0If rolls are served, are they <em>Mezonos <\/em>rolls or real bread? \u00a0If they are real bread, is there a washing station?\u00a0 If the <em>kiddush <\/em>is dairy, do the dairy products have to be <em>Cholov Yisroel <\/em>or will <em>Cholov Stam <\/em>products fit the bill?\u00a0 <\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\">If the <em>kiddush <\/em>bakery products have to be <em>yoshon<\/em>, the <em>baal simcha <\/em>should realize that <em>yoshon <\/em>does not just include breads, cakes and cookies. \u00a0Products such as jarred <em>gefilte <\/em>fish, licorice, pretzels, noodle <em>kugels <\/em>and even potato <em>kugels <\/em>that may have flour in their ingredients must also be <em>yoshon<\/em>.<\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\"> What is the <em>shul<\/em>\u2019s policy regarding prepared food that is brought in to the <em>shul <\/em>from a take-out store? \u00a0Does the store need to be under <em>hashgacha<\/em>, and if so which <em>hashgachos <\/em>would be acceptable? \u00a0Another issue to keep in mind is how the food is packaged when it comes into the <em>shul<\/em>. \u00a0Meat and fish items require two <em>simanim <\/em>(seals) when they leave the store; cheese, dairy, and bakery goods require only one <em>siman<\/em>. \u00a0Is someone responsible for checking that the items coming into the <em>shul <\/em>have a reliable kosher <em>hechsher <\/em>and are properly sealed?<\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\">Additionally, one should ask about the <em>shul<\/em>\u2019s policy regarding home baked items; sometimes there are outstanding home bakers who bake beautiful <em>simcha <\/em>cakes. \u00a0Does the <em>shul<\/em>\u2019s policy require kosher supervision for these cakes? \u00a0And if neighbors are bringing home baked products, some of the guests may expect a few of these goodies to be <em>yoshon<\/em>. \u00a0It would be a good idea to place small signs indicating which items are <em>yoshon<\/em>.\u00a0 <\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\">If potato chips and pretzels are being purchased, do they have to be <em>bishul Yisroel <\/em>and\/or <em>pas Yisroel<\/em>? \u00a0It goes without saying that someone needs to be responsible for opening all unopened cans, bags, boxes and bottles before <em>Shabbos<\/em>.\u00a0 <\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\">Candies are often brought into the <em>shul <\/em>by the <em>baal simcha<\/em>. \u00a0If the <em>kiddush <\/em>is <em>fleishig<\/em>, the candies will need to be <em>pareve<\/em>; but if the <em>kiddush <\/em>is <em>milchig<\/em>, should the candies be <em>cholov<\/em> <em>Yisroel<\/em>?<\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\">What is the <em>shul<\/em>\u2019s policy concerning wines and liquor? \u00a0Does all wine need to be <em>mevushal<\/em>? \u00a0Do all the liqueurs have reliable kosher supervision?\u00a0 <\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\">The <em>cholent <\/em>and other hot items will be dealt with in the <em>Sheva Brochos <\/em>section below.\u00a0 As one can clearly see, it is more than the color coordination and table decoration that contributes to a successful <em>kiddush<\/em>.<\/span><\/p>\n<p><strong><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: medium;\">The <em>Shalom Zachor<\/em><\/span><\/strong><\/p>\n<p><span style=\"font-size: small;\"><em><span style=\"font-family: Arial,Helvetica,sans-serif;\">Mazel Tov<\/span><\/em><span style=\"font-family: Arial,Helvetica,sans-serif;\">! \u00a0It\u2019s a boy, and he was born on Friday morning. \u00a0Everyone is rushing and hurrying to get the <em>shalom zachor <\/em>ready.\u00a0 Quick!\u00a0 Get the beer and the <em>arbes <\/em>(chickpeas).\u00a0 Wow!\u00a0 That cherry wheat flavored beer sure looks good! So does that can of chickpeas. Hold on a second. \u00a0Did you realize that flavored beers need reliable kosher certification? \u00a0If your guests only use <em>yoshon <\/em>products, were you aware that beer (which is produced from malted barley) may be <em>chodosh <\/em>after the end of December? With the exception of water and plain seltzer, all beverages require reliable kosher certification. \u00a0Do not make the mistake of assuming that a flavored alcoholic beverage is just a little lemon juice mixed in the beer; those flavors can also come from <em>Eretz Yisroel<\/em>. \u00a0Glycerin is often used as a blending agent in these flavored beverages. \u00a0Regular beer and ales are generally acceptable; those coming from the Far East, however, should be avoided. <\/span><\/span><\/p>\n<p><span style=\"font-size: small;\"><span style=\"font-family: Arial,Helvetica,sans-serif;\">As for the chickpeas, these are one of the leading items likely to be generated in a canning facility that also produces canned meat products. \u00a0It is therefore very important to purchase canned chickpeas with a reliable kosher certification. <\/span><\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: medium;\"><strong>The <em>Sheva Brochos <\/em><\/strong><\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\"><em>Sheva Brachos <\/em>are festive events in the Jewish life cycle, and <em>Shabbos Sheva Brachos <\/em>can be a grand undertaking.\u00a0 As the cost of having a caterer has become excessive for some, <em>baalei\u00a0 simcha <\/em>have opted to cater the event themselves and buy prepared foods from reliably certified food vendors. \u00a0In the trade, when food is purchased from the caterer or from the take-out store, it is referred to as a food service event as opposed to a fully catered <em>simcha<\/em>. \u00a0It is critical that the <em>baal simcha <\/em>understands what his responsibilities are for this particular <em>Shabbos <\/em>event.\u00a0<\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\"> When the caterer delivers the food items, or when the food items are picked up from the store or commissary, it is imperative that the food be properly sealed\u2014especially meat and fish. \u00a0Once the seals are broken, the <em>hashgacha<\/em>\u2019s responsibility ends. \u00a0It is the <em>baal simcha<\/em>\u2019s responsibility to check all food items as they enter his\/her home or social hall to determine if the products have proper kosher identification.<\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\">The <em>baal simcha <\/em>must also assure that the <em>kashrus <\/em>status of the food continues.\u00a0 He is responsible for ensuring that an observant Jew watches the meat, chicken and fish items to avoid problems of \u201c<em>bosor shenisalaim minhoayin<\/em>\u201d. This problem often arises when non-Jewish help is hired to prepare the meal and is not supervised in the social hall where the event is being prepared.\u00a0<\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\"> If there is non-Jewish or non-observant help cooking the meal, all fires must be turned on by an observant Jew to avoid problems of <em>bishul akum <\/em>(food being cooked by an <em>aino Yehudi). \u00a0<\/em>It is very important to realize that fires are often turned on and off during the course of the preparation.<\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\">Since the <em>baal simcha <\/em>is preoccupied with the event and cannot be in the kitchen, he should designate a person to be responsible for igniting all cooking and heating equipment.\u00a0 Since no cooking can take place on <em>Shabbos <\/em>itself, all foods must be fully cooked prior to <em>Shabbos<\/em>. \u00a0Many <em>rabbinic <\/em>laws were instituted to prevent transgressing <em>Torah <\/em>prohibitions, with two major ordinances to prevent cooking on <em>Shabbos<\/em>. \u201c<em>Shehiya<\/em>\u201d is leaving uncooked food on a cooking surface before <em>Shabbos, <\/em>in a place where it is possible for the fire to be adjusted to hasten or improve the cooking. \u00a0To prevent this, the rabbis decreed that the food should be edible before <em>Shabbos, <\/em>or that the fire and controls be covered with a <em>blech <\/em>in order to avoid any problems of adjusting the fire. It is the custom that all foods &#8211; both main and side dishes &#8211; \u00a0should be cooked before <em>Shabbos<\/em>. \u00a0In addition, the stovetop should be covered with a <em>blech <\/em>and the knobs should be covered.<\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\"> Everyone loves hot potato <em>kugel<\/em>. \u00a0The second prohibition enacted to ensure that there is no cooking on <em>Shabbos <\/em>entails returning cold food to the stove or oven. \u00a0This prohibition is called \u201c<em>Chazara\u201d<\/em>. \u00a0There are strict guidelines that must be followed when returning cooked items to the oven. \u00a0These apply even if the stovetop is covered with a <em>blech<\/em>, and even if the food that one wants to put onto the <em>blech <\/em>is fully cooked and still hot. \u00a0It is very important to review the laws of <em>chazara <\/em>with your <em>rav <\/em>to avoid any problems on <em>Shabbos <\/em>day.<\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\">It is also important to use water urns that do not introduce fresh water, and to have all water urns turned on and tea essence made before <em>Shabbos<\/em>. \u00a0If sugar is being served in packets, all packets should be opened before <em>Shabbos<\/em>. \u00a0All sealed food containers should also be opened before <em>Shabbos<\/em>. <\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\">\u00a0One should also be cautious about salads and vegetables, which have to be checked before <em>Shabbos <\/em>to make sure they are insect-free. \u00a0Often salads, platters and trifles are made on <em>Shabbos <\/em>and involve cutting and separating peels, pits and seeds from the fruits or vegetables. Separating these items incorrectly may cause one to violate the prohibition of \u201c<em>borer<\/em>\u201d, separating the bad from the good. \u00a0These laws can become quite complicated in food preparation. \u00a0Therefore, it is advisable to check with one\u2019s <em>rav <\/em>to review these rules. <\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\">All bakery items should be checked for their <em>pas Yisroel <\/em>and <em>yoshon <\/em>status.\u00a0 Wine and liqueur have to be checked for proper <em>hechsharim <\/em>and, if necessary, the wine or grape juice should be <em>mevushal.<\/em><\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\">\u00a0The <em>baal simcha <\/em>is responsible for his\/her chinaware, flatware, utensils, heating equipment, and display pieces. \u00a0Any questions regarding the previous use of these utensils should be addressed prior to their use. <\/span><\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\">\u00a0Last but not least, the guests should be clearly aware that a <em>simcha <\/em>being held in a hall or a <em>shul <\/em>is not under any official kosher certification. \u00a0As you can see, a little planning can go a long way to ensure that your <em>simcha <\/em>will be <em>freilach <\/em>and <em>geshmack <\/em>with minimum <\/span><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\"> aggravation. \u00a0Once you have catered your own <em>simcha, <\/em>you will have a different appreciation for the words <em>Mazal Tov<\/em>\u2014you\u2019ve made it through the self-catering experience! \u00a0<em>Yasher Koach<\/em>!<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Published Summer 2007<\/p>\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; font-size: small;\">The joy, the planning, the anticipation, the expense \u2014 there is a lot that goes into a Yiddishe simcha.
