Kosher consumers are willing to pay top dollar for a quality kosher product.&nbsp;Pesach <em>matzos<\/em> are no exception.&nbsp;Machine <em>matzos<\/em> with fine Mehadrin <em>hechsheirim<\/em> are readily available on the supermarket shelf.&nbsp; Are all machine <em>matzos<\/em> created equal? <\/span><wp-block data-block=\"core\/more\"><\/wp-block><\/p>\n\n\n\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; \">Regarding <span style=\"font-family: Arial,Helvetica,sans-serif; \"><span style=\"font-family: Arial,Helvetica,sans-serif; \">matzah<\/span><\/span><\/span> <span style=\"font-family: Arial,Helvetica,sans-serif; \">baking and the time parameters for <em>chimutz<\/em> (leavening), the <em>Shulchan Aruch<\/em> states,<a id=\"_ftnref1\" name=\"_ftnref1\" title=\"\" href=\"#_ftn1\"><sup>1<\/sup><\/a> \u201cOne should not leave the dough dormant, not for a moment.\u201d If the dough is constantly being worked the <em>chimutz<\/em> process is impeded. However, the <em>Shulchan Aruch<\/em> continues, \u201cIf the dough is left dormant for a <em>mil<\/em>, the dough will rise and will become <em>chometz<\/em>.\u201d<\/span><\/p>\n\n\n\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; \">How long is a <em>mil<\/em>?<a id=\"_ftnref2\" title=\"\" name=\"_ftnref2\" href=\"#_ftn2\"><sup>2<\/sup><\/a> The <em>Beis Yos<\/em>ef posits that a <em>mil<\/em> is 18 minutes.&nbsp;18 minutes has been the accepted <em>chimutz<\/em> standard from time immemorial.&nbsp;After 18 minutes, the dormant dough becomes <em>chometz<\/em>.&nbsp; However, not all halachic opinions agree with the 18-minute <em>mil<\/em>.&nbsp;The <em>Gra<\/em>, <em>Magen Avrom<\/em><a id=\"_ftnref3\" title=\"\" name=\"_ftnref3\" href=\"#_ftn3\"><sup>3<\/sup><\/a> and others maintain that a <em>mil<\/em> is 22.5 minutes. Although conventional wisdom, belief and advertisement have indicated that all the Mehadrin machine <em>matzos<\/em> are \u201c18-minute <em>matzos<\/em>,\u201d are all 18-minute machine <em>matzos<\/em> created equal?<\/span><\/p>\n\n\n\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; \">When a hand <span style=\"font-family: Arial,Helvetica,sans-serif; \"><span style=\"font-family: Arial,Helvetica,sans-serif; \">matzah<\/span><\/span><\/span> <span style=\"font-family: Arial,Helvetica,sans-serif; \">bakery claims that their <em>matzos<\/em> are \u201c18-minute <em>matzos<\/em>,&#8221; from which moment are the 18 minutes measured?&nbsp; In a U.S. hand <span style=\"font-family: Arial,Helvetica,sans-serif; \"><span style=\"font-family: Arial,Helvetica,sans-serif; \">matzah<\/span><\/span><\/span> <span style=\"font-family: Arial,Helvetica,sans-serif; \">bakery such as <em>Tzelem Pupa<\/em>, the 18-minute segments are measured from the time the water is poured onto the flour to knead the mixture into dough until the last <span style=\"font-family: Arial,Helvetica,sans-serif; \"><span style=\"font-family: Arial,Helvetica,sans-serif; \">matzah<\/span><\/span><\/span> <span style=\"font-family: Arial,Helvetica,sans-serif; \">reaches the oven.&nbsp;From the time that the flour and water are mixed, the <span style=\"font-family: Arial,Helvetica,sans-serif; \"><span style=\"font-family: Arial,Helvetica,sans-serif; \">matzah<\/span><\/span><\/span> <span style=\"font-family: Arial,Helvetica,sans-serif; \">baking team has 18 minutes to knead, roll, perforate and bake the <em>matzos<\/em>.&nbsp;After 18 minutes, the entire operation stops and the cleaning process begins.&nbsp;When this is finished, the next 18-minute segment commences.&nbsp; <\/span><\/p>\n\n\n\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; \">This is not the case with machine <em>matzos<\/em>.&nbsp;In regular machine <span style=\"font-family: Arial,Helvetica,sans-serif; \"><span style=\"font-family: Arial,Helvetica,sans-serif; \">matzah<\/span><\/span><\/span> <span style=\"font-family: Arial,Helvetica,sans-serif; \">production, <em>matzos<\/em> continue to be produced all day long with intermittent cleaning a few times a day. The machines do not stop.&nbsp;Mixing bowls in non-Mehadrin<em> <\/em>bakeries are cleaned every 18 minutes. &nbsp;<\/span><\/p>\n\n\n\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; \">This is not the case with Mehadrin machine <em>matzos<\/em>.&nbsp; Most <span style=\"font-family: Arial,Helvetica,sans-serif; \">Mehadrin <\/span>machine <em>matzos<\/em> come from Eretz Yisroel.&nbsp; <span style=\"font-family: Arial,Helvetica,sans-serif; \">Mehadrin<\/span> machine <span style=\"font-family: Arial,Helvetica,sans-serif; \"><span style=\"font-family: Arial,Helvetica,sans-serif; \">matzah<\/span><\/span><\/span> <span style=\"font-family: Arial,Helvetica,sans-serif; \">bakeries stop and clean after every segment.&nbsp; However, they utilize both time estimations of a <em>mil<\/em> for their <span style=\"font-family: Arial,Helvetica,sans-serif; \"><span style=\"font-family: Arial,Helvetica,sans-serif; \">matzah<\/span><\/span><\/span> <span style=\"font-family: Arial,Helvetica,sans-serif; \">production.&nbsp;<\/span><\/p>\n\n\n\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; \">Matzah baking can be broken down into three parts:\u00a0kneading, rolling and baking, which overlap. See chart:\u00a0<\/span><\/p>\n\n\n\n<div align=\"center\">\n<figure><img loading=\"lazy\" decoding=\"async\" src=\"\/articles\/wp-content\/uploads\/2015\/07\/matzoh-illustration.jpg\" alt=\"matzoh illustration\" width=\"300\" height=\"206\"><\/figure><p><\/p>\n<\/div>\n\n\n\n<p>It takes approximately 1 \u00bd minutes for the first kneaded dough to reach the roller, and an additional 2 \u00bd minutes of rolling and sheeting for the first matzah to reach the oven.&nbsp;In total, it takes approximately 4 minutes for the first matzah to reach the oven, and 30 seconds for the matzah to be baked.&nbsp;In a machine matzah production, the <em>matzos<\/em> are continuously kneaded, rolled and baked for an entire 22.5 minute segment \u2013 the <em>Gra<\/em>\u2019s estimation of a <em>mil<\/em>.&nbsp;However, <em>each<\/em> part of the 22.5 minute segment concludes within 18 minutes, allowing enough time for the last <em>matzos<\/em> to be rolled and baked within 22.5 minutes (refer to the chart).<\/p>\n\n\n\n<p>In these bakeries, the first 4 minutes of kneading are not calculated in the \u201c18-minute count\u201d because the <em>halachah<\/em> states that <em>chimutz<\/em> (leavening) does not begin if the dough is constantly being worked.&nbsp;This is what is happening during the kneading and rolling processes; therefore, the 18-minute segment begins when the initial matzah starts baking. The entire segment takes 22.5 minutes, which is in compliance with the 22.5 minute <em>mil<\/em>.&nbsp; However, each part of the segment lasts no longer than 18 minutes; hence, the bakeries call their <em>matzos<\/em> \u201c18-minute <em>matzos<\/em>\u201d. This holds true for both regular (<em>peshutos<\/em>) and <em>shmura<\/em> Mehadrin machine <em>matzos<\/em>.&nbsp;The only 18-minute machine <em>matzo<\/em>s that are calculated from the time the flour and water are mixed, as is done in hand matzah bakeries, are <em>chabura matzos<\/em>.<\/p>\n\n\n\n<p>What are <em>chabura matzos<\/em>?&nbsp; Many bakeries allow <em>chaburos<\/em> \u2013 individual groups \u2013 to rent time in a bakery to bake their own <em>matzos<\/em>.&nbsp; When <em>chaburos<\/em> bake <em>matzos<\/em>, they start calculating the 18 minutes from the time that the flour and water are mixed.&nbsp; Their cleanup time is longer than the regular <em>non-chabura<\/em> productions.&nbsp;Typically, a machine cleanup takes 10 minutes between segments; a <em>chabura<\/em> clean-up can take up to 45 minutes.&nbsp; When machine <em>matzos (<\/em>such as Hadar, B\u2019tam, Jerusalem or Yehuda) advertise on the box \u201c18-minute <em>matzos<\/em>,\u201d they are using the 22.5-minute standard (unless the box states \u201c<em>chabura<\/em> 18-minute <em>matzos<\/em>\u201d or &#8220;Chabura brand 18-minute machine <em>matzos&#8221;)<\/em>, indicating that it is an 18-minute segment from start to finish.<\/p>\n\n\n\n<p>All of the Mehadrin machine matzah bakeries possess very reliable kosher supervision.&nbsp; However, the kosher consumer should realize that not all Mehadrin machine <em>matzos<\/em> are created equal.<\/p>\n\n\n\n<div>\n<div id=\"ftn1\">\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; \"><a id=\"_ftn1\" title=\"\" href=\"#_ftnref1\" name=\"_ftn1\"> <\/a>1. <em>Orach Chaim<\/em> 459:2.<\/span><\/p>\n<\/div>\n<div id=\"ftn2\">\n<p><span style=\"font-family: Arial,Helvetica,sans-serif; \"><a id=\"_ftn2\" title=\"\" href=\"#_ftnref2\" name=\"_ftn2\"> <\/a>2.
