{"id":11947,"date":"2023-04-20T01:55:54","date_gmt":"2023-04-20T01:55:54","guid":{"rendered":"https:\/\/www.star-k.org\/articles\/?p=11947"},"modified":"2023-04-20T01:55:54","modified_gmt":"2023-04-20T01:55:54","slug":"who-has-whomover-the-barrel","status":"publish","type":"post","link":"https:\/\/www.star-k.org\/articles\/uncategorized\/11947\/who-has-whomover-the-barrel\/","title":{"rendered":"Who Has Whom\u2026Over the Barrel?"},"content":{"rendered":"\n<p>Kashrus Kurrents, Spring 2023<\/p>\n\n\n\n<p>The immortal words of Koheles, \u201c<em>l\u2019kol zman va\u2019eis<\/em>\u201d \u2013 there\nis a time and a place for everything \u2013 rings true in all of life\u2019s twists and turns\nand is certainly relevant in the world of kashrus and kashrus standards. Kosher\nfood certification has grown exponentially, and standards have improved with\nage. Who would have dreamed that <em>pas Yisroel, bishul Yisroel<\/em>, and<em>\ncholov Yisroel<\/em> would be available to the wider kosher marketplace?<\/p>\n\n\n\n<p>Forty years ago, a can of tuna with <em>bishul Yisroel <\/em>and <em>hashgacha\ntemidis <\/em>was a rare commodity. Many a yeshiva would resort to <em>stam cholov\n<\/em>when <em>cholov Yisroel <\/em>wasn\u2019t available, something that would be\nunheard of half a century later. <em>Yoshon <\/em>was an anomaly, except for the\nmeticulous few; today, <em>yoshon <\/em>is a kosher household term and it\ncontinues to proliferate. <\/p>\n\n\n\n<p>These amazing developments across a variety of industries are a\ntestament to the tireless diligence of kashrusagencies who strive to\nprovide the kosher consumer with the finest quality kosher products and to uphold\nthe gold standard of <em>hilchos kashrus<\/em>. These efforts to certify many\npopular consumer items have told the story of the growing success of kashrus in\nthis country over the last quarter century. This has held true for many\nindustries \u2013 save one.<\/p>\n\n\n\n<p>There yet remains one industry that for decades has been shrouded\nin mystery and has refused to strip away her opaque shrouds. This is an industry\nthat appeals to young and old alike. If you haven\u2019t guessed it: it is the world\nof liquor.<\/p>\n\n\n\n<p>The world of liquor production is truly a global phenomenon. It has\nbeen around since Noach planted the <em>kerem.<\/em> It is a subject that is dealt\nwith extensively in the <em>Gemara, Halacha<\/em>, and <em>poskim<\/em>.And\nit has been one of the least transparent products in the marketplace. To this\nday, you won\u2019t see an ingredient declaration on a bottle of booze. <\/p>\n\n\n\n<p>While for decades, the industry followed manufacturing protocols\nand BATF<a href=\"#_ftn1\">[1]<\/a>\nregulations, kashruswas not privy to any industry information, nor did\nit make any significant inroads into the confidence of the brew masters and\nmaster blenders of mystery. Kashrus-wise, this was unacceptable.<\/p>\n\n\n\n<p>Approximately a quarter of a century ago, STAR-Kbegan\nresearching the kashrusof beer and liquor in earnest. The internet, the\nexciting new \u201cinformation highway,\u201d was then in its infancy, so information had\nto be culled the old-fashioned way, through faxes and phone calls, and good\nold-fashioned gumshoeing, to find out whom to contact to help us ferret fact\nfrom fiction. It was a painstaking but sometimes fun process, and over time great\nfriendships were cultivated. Through dogged persistence, we found ourselves making\nheadway and \u2013 to borrow a well-known beer term \u2013 slowly things were becoming\nclarified.<\/p>\n\n\n\n<p>STAR-K, as a kashrus agency committed to kosher consumer education, felt a responsibility to create a pair of lists, one of certified-kosher liquors and liqueurs, and a separate one of \u201cacceptable\u201d products \u2013 ones that were determined to be free of kashrus concerns due to their strict manufacturing and regulatory protocols. Over time, different agencies created their own lists, and each based their \u201cacceptable\u201d list using their own yardstick \u2013\u00a0 what was acceptable to one agency might be unacceptable to another.<\/p>\n\n\n\n<p>Then two phenomena emerged: <\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Whereas\na kosher consumer would <em>never<\/em> think of purchasing a soft drink or\nflavored seltzer without a reliable kosher certification, we noted this did not\nhold true when it came to liquor; there we found an element of indiscriminate drinking\nby most, with a heavy reliance on the \u201cacceptable\u201d lists. These lists were created\nby agencies solely on the basis of a \u201creasonable assumption,\u201d in sharp contrast\nto the rigor applied, for example, by STAR-K to certify a flavored hazelnut\nK-cup.<\/li><li>With\nthe growing awareness by many breweries and distilleries about the accelerating\nconsumer demand for kosher alcoholic beverages, the manufacturers began voluntarily\nopening their portals and seeking reliable kosher certification on their own.\nScore another win in the kosher certification column!<\/li><\/ol>\n\n\n\n<p>As a result of\nthe steady increase in kosher-certified beers, whiskies, liquors, and liqueurs,\nthe discriminating kosher consumer can now select from a wide range of high quality\nalcoholic beverages with reliable kosher certification. The question <em>du jour<\/em>\nis how to encourage, inspire and convince a generation of consumers who have\nlong relied on \u201capproved lists\u201d to change course and take the certified route,\nto move from \u201c<em>bedi\u2019eved<\/em>\u201d to \u201c<em>l\u2019chatchila<\/em>.\u201d Indeed, the task is\nchallenging, and it won\u2019t happen overnight. <\/p>\n\n\n\n<p>To make a\nsignificant change in the kosher consumer\u2019s way of thinking \u2013 or in their case,\ntheir way of drinking \u2013 kashrusagencies should continue in the their quest\nto certify quality liquors. As more and more high-end bourbons, scotches and\ntequilas elect to become kosher-certified, and the liquor market becomes saturated\nwith certified kosher spirits, kashrusagencies are better able to suggest\nviable options to their kosher consumers, and not \u201ccompromise\u201d options.<\/p>\n\n\n\n<p>It is a fact\nthat kosher consumers would not consider drinking flavored beers without\nreliable <em>hashgacha<\/em>. This is true of liqueurs, cognacs and vermouth as\nwell, all of which require reliable kosher certification. STAR-K now certifies many\npremium kosher flavored beers, seltzers, teas, and ciders, including Samuel\nAdams Truly, Twisted Tea, and Angry Orchard. These days, there are a &nbsp;barrelful of kosher-certified product on the\nmarket to choose from. No one need miss Remy Martin or Courvoisier. <\/p>\n\n\n\n<p>It is still a\nprocess to reach the next <em>madreiga<\/em>. Decades earlier, before Mr. Joseph Rosenberger\n<em>zt\u201dl<\/em> educated an entire world about the mitzvah of <em>shatnez, <\/em>people\nwho were aware of the mitzvah would crush suit collars to see if the stiffening\nwas soft. Most of American Jewry outside of Brooklyn didn\u2019t even know there was\nsuch a mitzvah. Today, who won\u2019t check a garment to see that it is <em>shatnez<\/em>-free?\nIt was an evolving process and the process succeeded.<\/p>\n\n\n\n<p>Elevating our <em>ruchniyus<\/em>\nby choosing only kosher-certified product is today\u2019s challenge for the kosher\nliquor consumer. Unquestionably, it is hard to change a mindset from years of\nrelying on \u201cacceptable lists\u201d to abiding only by strictly certified ones. But\nkashrus agencies have spent decades taking the kosher alcoholic beverage\nconsumer from the unknown to the known, and now, more and more companies are moving\nto become kosher certified. <\/p>\n\n\n\n<p>With so much movement\nafoot, I am certain that the next phase is to progress from \u201cacceptable\u201d to \u201ccertified.\u201d\nThis is our generation\u2019s <em>shatnez<\/em> moment.
